It’s hard for me to believe that it’s getting so close to our one year wedding anniversary. Our wedding day seems like yesterday, and years ago at the same time. This year has flown by. Blue Ridge Babe is turning 1 year old in two weeks. Two people in love dated 8 months, got engaged, got married, and have now been married almost 10 months. It’s hard for me to wrap my head around all the changes that have happened this year. I can’t wait to celebrate our first anniversary and first married Christmas together!
I didn’t mean to, but I ended up making mostly dessert recipes for the blog this month! These Chocolate Peanutbutter Cake Bites are seriously addictive!
And these 4 ingredient cake mix cookie bars? Well let’s just say you’ll want to make these approximately 505672101 times. A warm cookie bar paired with cold vanilla ice cream…well that’s my kinda dessert!
I also fell in love with all things Pumpkin in September! These Pumpkin Chocolate Chip Protein Cookies will knock your socks off! They taste amazing + are filled with protein + vitamins. Heck yeah!
I also created a Lazy Pumpkin Spice Frappuccino – for when you want a healthier than Starbucks drink that you can make at home in 5 minutes! I may or may not have had two in a row while recipe testing and bounced off the wall for hours…I’ll never tell.
One night Robbie was having to mow late and I was exhausted. But I beat him home by a half hour and was able to whip up one of my favorite vegan dinners! We had crispy potatoes topped with black beans, fresh peppers, yeast cheese, hot sauce, and fresh lime juice!
Bonnie here is one of my best kitchen helpers! She’s constantly licking everything. Quite possible the sweetest dog I’ve ever met, however it’s a little odd to have a dog that I walk outside and she will lick my hair. Hah. Silly Bonnie Baby. Bonnie is one of our current foster dogs that is available for adoption! Whoever gets this baby will get a real gem of a dog.
September brought Rock into our little family as another foster dog. Rock is an older (around 8) beagle whose owner had passed away. He wouldn’t have stood much chance at a kill shelter. When Rock first came to us, he hadn’t been eating in close to 5 days. The first few days were rough and I didn’t really know what to do with him. He was obviously still grieving and just totally listless.
Fast forward a week and a puppy came out in this sweet old man’s body! He started bouncing around and LOVED playing with our other dogs. It was such a night and day transformation. He is now happy as a clam! Fostering dogs like Rock is so rewarding.
Also in September was Iron Mountain! Robbie did the 30 miler this year since he didn’t have enough time to train for the 50 miler like last year. It was a great weekend!
