30 Minute Sweet Potato Refried Bean Nachos

These 30 minute sweet potato refried bean nachos are made with homemade refried beans and cheese sauce. A healthy and delicious dinner that's ready fast!

Ingredients

  • One batch of 5 Minute Refried Beans
  • One batch of 5 Minute Nacho Cheese Sauce
  • Corn chips
  • Chopped cilantro, for topping
  • For the Sweet Potato

  • 1 large sweet potato, diced into small chunks
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/8 cup olive oil

Directions

  1. Preheat oven to 450 degrees
  2. Chop sweet potato into small chunks and toss with cumin, salt, garlic powder, and olive oil
  3. Spread sweet potatoes in a single layer on a baking sheet
  4. Bake at 450 for 10 minutes, then flip and roast another 10 minutes (checking every 5 minutes to make sure they do not burn.) - See Notes section
  5. While sweet potatoes are cooking, make one batch of 5 Minute Refried Beans and set aside
  6. Next, heat a sauce pan on medium heat and make one batch of 5 Minute Nacho Cheese Sauce
  7. Whisk until thick and creamy (around 5 minutes or less)
  8. Once sweet potatoes are done cooking it's time to assemble it all!
  9. Spread a single layer of corn chips on a large baking sheet
  10. Spread out sweet potatoes
  11. Pour refried beans over evenly
  12. Pour cheese sauce over and top with chopped cilantro
  13. Serve immediately

Recipe Notes

The sweet potatoes will blacken on the edges (this is good!), but we want to make sure that they aren't smoking/burning. This will depend on your oven how quickly they cook. You want them to be blackened and soft throughout, but not burnt
