Cranberry White Chocolate Chip Cookies

Ingredients

  • 1 cup fresh cranberries, halved or chopped
  • 2 cups white chocolate chips
  • 1/4 cup oat flour
  • 1/4 cup coconut flour
  • 1 1/2 cups whole wheat pastry flour
  • 1 teaspoon sea salt
  • 1 1/4 cups pure cane sugar
  • 1 teaspoon baking soda
  • 1/4 cup olive oil
  • 1/4 cup coconut oil, melted
  • 1/3 cup applesauce (no sugar added)
  • 2 eggs
  • 1 teaspoon vanilla extract

Directions

  1. In a medium sized bowl, whisk together oat flour, coconut flour, whole wheat pastry flour, salt, and baking soda until combined
  2. In a separate bowl, beat sugar, olive oil, melted coconut oil, applesauce, vanilla extract, and eggs
  3. Add dry ingredients and beat to combine
  4. Fold in chopped cranberries and white chocolate chips
  5. Drop by spoonfuls onto a baking sheet
  6. Bake at 350 degrees for 11-13 minutes
  7. Store in the fridge
