Today I whipped up these super easy (vegan) Chocolate Peanut Butter Almond Bites as a lighter dessert that we can enjoy for New Year’s!

I used Blue Diamond’s lightly salted almonds because they have 50% less sodium than their other almonds.

These turned out even more delicious than I expected. They are seriously addictive, I can’t stop eating them! Plus they don’t leave me feeling sluggish and too full, win win!

Chocolate Peanut Butter Almond Bites

Total Time 10 minutes

Ingredients

  • 1 cup semi sweet chocolate chips
  • 1 teaspoon coconut oil (measured while solid)
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons all natural peanut butter
  • Blue Diamond Lightly Salted Almonds

Instructions

  1. In a small saucepan, combine chocolate chips, coconut oil, vanilla extract, and peanut butter
  2. Heat on low, stirring often, until mixture is fully melted (around 5 minutes)
  3. Line baking sheets with wax paper
  4. Using a spoon, drizzle chocolate into circles
  5. Place 2 almonds in the center of each chocolate circle and press down lightly
  6. Freeze for 30 minutes, or until set
  7. Serve cold and store in fridge or freezer
