Can you believe it’s July already?! I realized a couple of days ago that I forgot my May Highlights post. I love doing these little recaps, so here’s May & June on Blue Ridge Babe all wrapped up into one post! 🙂
First up (from May) is this Guilt Free Mocha Mug Cake. After several tries, I got this recipe just perfect! It tastes like some fancy coffee mocha cake you’d be eating at Starbucks. And it’s also a great mid-day pick me up if you need a chocolate/coffee fix!
Also in May, the hubby made these Spicy Tofu Tacos with Cilantro Avocado Sour Cream for me and they were SO good I didn’t want to stop eating them. But seriously, y’all gotta make these!
Speaking of that cute boy I married, I also wrote a fun little post called 20 Ways You Know You’re Married to an Ultra Runner!
Another favorite from May is this 3 Ingredient Mexican Avocado Dip – pretty much the greatest thing since sliced bread if you love nutritional yeast + avocado (like me!) I love making this for a healthy summer snack!
Robbie ran two races in the last couple months – the last until this September! First up was the Trail Nut Half Marathon.
Then Conquering the Cove Marathon! That was a fun day – Robbie had to work after the race and we spent 5 hours ripping out carpet from a house. He got up at 4, ran a marathon, worked 5 hours, and still had energy! I on the other hand was falling asleep standing up 😉

These Crispy Black Bean Burgers were a big hit!
My sweet Tommy Baby made an appearance on the blog! I wrote this post talking about how I rescued him as a baby!
Also on the blog were these (Vegan) Garlic Tofu Noodle Bowls! The flavor depth of this sauce is ridiculous, definitely a favorite of mine!
Another chocolate recipe – these Whole Wheat Chocolate Cakes for Two would be perfect to make for date night!
Last but not least are these Dark Chocolate Sea Salt No Bake Cookies. TO. DIE. FOR. Literally the best chocolate sauce I’ve ever made goes into these babies!
