This recipe makes 24 muffins, so I took half to my neighbor and kept half for us.

Healthier oatmeal chocolate chip cookie muffins made with simple wholesome ingredients

Ingredients

  • ½ cup extra virgin olive oil
  • ½ cup coconut oil, melted
  • ⅓ cup unsweetened applesauce
  • ⅓ cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • 2 eggs
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brown sugar
  • 2 cups whole wheat pastry flour
  • 2 cups rolled oats (old fashioned oats)
  • 10 oz chocolate chips

Instructions

  1. Whisk together olive oil, melted coconut oil, brown sugar, vanilla extract, almond milk, and applesauce
  2. Add eggs and whisk to combine
  3. In a separate bowl, whisk together nutmeg, salt, flour, baking powder, and baking soda
  4. Add the dry mixture to the wet, and use a rubber spatula to mix until just combined
  5. Fold in oats and chocolate chips
  6. Line 2 muffin tins with parchment paper liners (these help the muffins not stick)
  7. Fill muffin liners ¾ of the way full with batter
  8. Bake at 350 degrees for 19-22 minutes, or until a toothpick inserted comes out clean

any suggestions for allergy friendly? can't have coconut oil or almond milk!

Hey Jess! You could try subbing any other milk that you can have, and use olive oil or melted butter in place of the coconut oil. I haven't tried it myself, but it should work, hope that helps!

Hi Amy,

I haven't tried making these gluten free, but you should be able to substitute the flour for any gluten free flour blend. Most of them say on the package that they are a 1:1 sub. Let me know if you try it!
