I know I say something every month to the tune of I can’t believe it’s already (insert month), but seriously you guys, November?! It just can’t be. I had a timehop pop up this morning telling me that I was wedding planning for my wedding in 44 days this time last year. That means it’s only 44 days until our one year anniversary! Craziness. I have no clue where this year has gone to.
I’ll start off by saying that October was a very special month for me, as I celebrated my one year blogiversary! You can read my thoughts and tips for new bloggers in this post.
As far as recipes go, October brought these Vegan Smashed Potatoes with Maple Tempeh Bacon to the blog! I have seriously been dreaming about these for weeks. I need to make another trip to Whole Foods to buy more tempeh bacon so I can make this again! Robbie and I devoured the whole thing in about 5 minutes and I made it again the next night. We had it the second time with crispy barbeque tofu…it was a match made in heaven! We kept going on and on about how we couldn’t believe how freakin good it was.
Also in October were these Chocolate Chocolate Chip Muffins! I used protein powder in these to make them perfect for a quick breakfast, snack, or dessert!

Also this month, I re-photographed my Easy Vegan Stuffing, just in time for Thanksgiving!
After an afternoon of house cleaning and getting caught up on our to do list, we headed over to our neighbor’s house across the street to hang out and wait for trick or treaters. Laura made crockpot cider and hot chocolate to hand out to anyone that wanted it, and we had a lot more kids come by this year! We sat outside around a fire and enjoyed our evening. It was pretty perfect. I also carved my first ever pumpkin! We bough a dremel which was pretty fun to use…I was covered in pumpkin pieces from head to toe from it flying everywhere! Pretty sure a first grader could’ve carved a better pumpkin, but that’s ok, I love it 🙂
