Ingredients

  • 1 ½ cups oat flour
  • cup coconut flour
  • 1 teaspoon sea salt
  • cups organic cane sugar
  • 1 teaspoon baking soda
  • ¼ cup olive oil
  • ¼ cup coconut oil measured while mostly solid
  • ½ cup applesauce
  • 1.5 teaspoons vanilla extract
  • 2 eggs
  • cups rolled oats
  • 10 oz dairy free dark chocolate chunks or chips

Instructions

  • Combine oat flour, coconut flour, salt, and baking soda in a bowl and whisk well.
  • If coconut oil is mostly hard, melt until soft or liquid in the microwave (15-30 seconds usually)
  • Beat sugar, olive oil, coconut oil, applesauce, and vanilla extract in a large mixing bowl.
  • Add eggs and beat well.
  • Add dry mixture to wet, beating to combine.
  • Stir in rolled oats and chocolate chunks.
  • Drop by spoonfuls onto a greased baking sheet.
  • Bake at 350 for 9 - 11 minutes, or until bottoms are cooked and crispy but not burnt
