Zucchini Chocolate Chip Muffins

These easy zucchini chocolate chip muffins are always a family favorite!

Ingredients

  • 1 teaspoon vanilla extract
  • 2 cups zucchini grated
  • 1 ½ cups whole wheat pastry flour
  • 2 eggs beaten
  • ¼ cup brown sugar
  • cup pure maple syrup
  • ¼ cup rolled oats
  • cup unsweetened applesauce
  • ¼ cup olive oil
  • 1 teaspoon baking soda
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup mini chocolate chips plus more for topping

Instructions

  • Grate the zucchini and use a paper towel to soak out some moisture. Repeat several times if necessary. You want the zucchini not to be dripping wet
  • In a bowl, add the zucchini, beaten eggs, vanilla, olive oil, applesauce, maple syrup, brown sugar and chocolate chips. Stir well to combine.
  • In another large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and oats 
  • Make a well in the center of the dry ingredients
  • Pour the wet ingredients into the dry
  • Use a rubber spatula to stir until just combined (do not over mix)
  • Line a muffin tin with parchment paper liners, or spray it with cooking spray
  • Distribute the batter evenly into 12 muffin liners
  • Sprinkle the tops with additional chocolate chips
  • Bake at 350 degrees for 24 - 28 minutes, or until a toothpick inserted comes out clean
