- 1 cup fresh cranberries halved or chopped
- 2 cups white chocolate chips
- ¼ cup oat flour
- ¼ cup coconut flour
- 1 ½ cups whole wheat pastry flour or all purspose flour
- 1 teaspoon sea salt
- 1 ¼ cups pure cane sugar
- 1 teaspoon baking soda
- ¼ cup olive oil
- ¼ cup coconut oil melted
- ⅓ cup applesauce no sugar added
- 2 eggs
- 1 teaspoon vanilla extract
In a medium sized bowl, whisk together the oat flour, coconut flour, whole wheat pastry flour, salt, and baking soda until combined
In a separate bowl, beat the sugar, olive oil, melted coconut oil, applesauce, vanilla extract, and eggs
Add the dry ingredients to the wet and beat to combine
Fold in the chopped cranberries and white chocolate chips
Drop the batter by spoonfuls onto a baking sheet
Bake the cookies at 350 degrees for 11-13 minutes
