Ingredients

  • 1 cup fresh cranberries halved or chopped
  • 2 cups white chocolate chips
  • ¼ cup oat flour
  • ¼ cup coconut flour
  • 1 ½ cups whole wheat pastry flour or all purspose flour
  • 1 teaspoon sea salt
  • 1 ¼ cups pure cane sugar
  • 1 teaspoon baking soda
  • ¼ cup olive oil
  • ¼ cup coconut oil melted
  • cup applesauce no sugar added
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  • In a medium sized bowl, whisk together the oat flour, coconut flour, whole wheat pastry flour, salt, and baking soda until combined
  • In a separate bowl, beat the sugar, olive oil, melted coconut oil, applesauce, vanilla extract, and eggs
  • Add the dry ingredients to the wet and beat to combine
  • Fold in the chopped cranberries and white chocolate chips
  • Drop the batter by spoonfuls onto a baking sheet
  • Bake the cookies at 350 degrees for 11-13 minutes
