White Chocolate Cranberry Pecan Cookies

Ingredients

  • 1 cup chopped fresh cranberries
  • 1 ½ cups white chocolate baking chips
  • ¾ cups chopped pecans
  • 1 ½ cups whole wheat pastry flour or all purpose flour
  • 1 teaspoon salt
  • ¾ cup brown sugar
  • ½ cup cane sugar
  • 1 teaspoon baking soda
  • ½ cup butter melted
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  • Whisk together the flour, salt, and baking soda
  • In a separate bowl, beat the cane sugar, brown sugar, melted butter, vanilla, and eggs with an electric mixer
  • Add the dry ingredients to the wet, and beat to combine
  • Fold in the chopped fresh cranberries, pecan pieces, and white chocolate chips
  • Drop the batter onto a baking sheet by spoonfuls
  • Bake the cranberry pecan cookies at 350 degrees for 13 - 16 minutes

Notes

Store any leftover cookies in an airtight container for around 3 days for best freshness
