- ¼ cup + 1 tablespoon jarred diced pimento peppers drained
- 8 oz extra sharp yellow cheddar cheese freshly grated
- 8 oz cream cheese softened
- 3 tablespoons mayo
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- 1 cup pecan pieces
Beat the softened cream cheese and sharp cheddar cheese together
Add the drained pimento peppers, mayo, garlic powder, onion powder, and salt. Use a rubber spatula to combine
Cover and place in the fridge for at least one hour to chill
Once chilled, oil your hands and form the cheese mixture into a ball shape.
Roll the pimento cheese ball in pecans
Serve with crackers
Keep leftovers in an airtight container in the fridge for 3 - 5 days
