- 1 cup ripe mashed banana around 2-3 medium sized bananas
- ⅓ cup unsalted butter melted
- 2 eggs
- 1 teaspoon vanilla extract
- ¾ teaspoon cinnamon
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- ⅔ cup sugar
Preheat the oven to 375 degrees
Line a muffin tin with parchment paper muffin liners, or spray regular liners with cooking spray
Add the melted butter, sugar, eggs, vanilla extract, and mashed bananas to a large bowl and whisk to combine
In a separate bowl, whisk together the flour, salt, baking soda, and cinnamon
Add the dry ingredients to the wet and mix until just combined using a rubber spatula. Do not over mix.
Distribute the banana muffin batter into the muffin tins, then bake the banana muffins at 375 degrees for 17-19 minutes, until a toothpick inserted comes out clean.
Transfer to a wire cooling rack to cool completely
