Birthday Cake Mini Muffins

These light and fluffy birthday cake mini muffins are inspired by the popular Little Bites. They're the perfect healthier treat that are sure to be a kid favorite!

Ingredients

  • 1 cup plain full fat Greek yogurt
  • ¼ cup unsalted butter melted and slightly cooled
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup pure maple syrup
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ cup sprinkles plus more for topping

Instructions

  • Whisk together the flour, salt, baking soda, and baking powder in a mixing bowl.
  • In a separate bowl, whisk together the Greek yogurt, melted butter, eggs, vanilla extract, and maple syrup.
  • Add the dry ingredients to the wet and mix until just combined.
  • Gently fold in the sprinkles so that they do not bleed.
  • Spray a mini muffin tin and fill the cups ¾ of the way full (this will make 1.5 mini muffin tins worth, you should get 36 total mini muffins).
  • Top with additional sprinkles on top.
  • Bake the mini muffins at 350 degrees for 14-16 minutes, or until a toothpick inserted comes out clean.
