Birthday Cake Mini Muffins

- 1 cup plain full fat Greek yogurt
- ¼ cup unsalted butter melted and slightly cooled
- 2 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup pure maple syrup
- 1 ½ cups all-purpose flour
- ¼ teaspoon salt
- ½ cup sprinkles plus more for topping
Whisk together the flour, salt, baking soda, and baking powder in a mixing bowl.
In a separate bowl, whisk together the Greek yogurt, melted butter, eggs, vanilla extract, and maple syrup.
Add the dry ingredients to the wet and mix until just combined.
Gently fold in the sprinkles so that they do not bleed.
Spray a mini muffin tin and fill the cups ¾ of the way full (this will make 1.5 mini muffin tins worth, you should get 36 total mini muffins).
Top with additional sprinkles on top.
Bake the mini muffins at 350 degrees for 14-16 minutes, or until a toothpick inserted comes out clean.
