Gluten Free Cookie Bars

Easy gluten free cookie bar recipe with made with peanut butter and oats.

Ingredients

  • 1 ½ cups natural creamy peanut butter the only ingredients should be peanuts and salt
  • ¾ cup pure maple syrup
  • 1 tablespoon vanilla extract
  • 1 ½ cups rolled oats
  • 1 ½ cups semi-sweet chocolate chips
  • 3 eggs
  • ¾ teaspoon baking powder
  • ¾ teaspoon salt

Instructions

  • Preheat your oven to 350 degrees.
  • Beat together the peanut butter, maple syrup, eggs, and vanilla extract.
  • Add the oats, baking powder, and salt and mix until combined.
  • Fold the chocolate chips into the batter using a rubber spatula.
  • Grease a 9x13 dish with cooking spray or line it with parchment paper.
  • Spread the cookie bar batter out evenly and press it down. Add additional chocolate chips on top for garnishing, if desired.
  • Bake the cookie bars at 350 degrees for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Allow the cookie bars to cool completely, then cut them into 16 pieces.

Notes

Store leftover cookie bars in an airtight container in the refrigerator for 4-5 days.
