Mint Chocolate Energy Bites

Ingredients

  • 1 cup natural creamy almond butter see notes
  • 1 ¼ teaspoons salt see notes
  • ½ cup chocolate protein powder
  • 1 tablespoon unsweetened cocoa powder
  • ½ cup pure maple syrup
  • ½ cup quick oats
  • ½ cup rice krispies cereal
  • 2 teaspoons peppermint extract
  • ½ cup mini chocolate chips

Instructions

  • Mix together all of the ingredients in a mixing bowl using a rubber spatula until thoroughly combined
  • Use a 1.5 tablespoon size cookie scoop to drop balls of batter onto a wax paper lined baking sheet
  • Roll each ball in your hands to smooth out the shape
  • Refrigerate or freeze until firm, then transfer to an airtight container for storing. These will keep 5 days in the fridge or 2-3 months in the freezer.

Notes

Natural almond butter does not have added sweetener. The only ingredients should be almonds, oil, and salt.
If your almond butter has added salt, leave out the salt from the recipe ingredients. After you stir together the batter, you can salt to taste. I would start with 1/4 teaspoon to 1/2 teaspoon.
