Peanut Butter Pretzel Energy Bites
These salty sweet peanut butter pretzel energy bites make a delicious mid afternoon snack!

- 1 ½ cups no stir creamy peanut butter
- ½ cup honey
- ¾ cup chopped pretzels
- 1 cup quick oats
- ½ cup chocolate protein powder
- ½ cup mini chocolate chips
- 2 teaspoons vanilla extract
Use a food processor to pulse pretzels into small pieces. Measure the pretzels once chopped.
Add all of the ingredients to a mixing bowl, then use a rubber spatula to mix it all together until a thick batter forms.
Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet.
Roll each ball with your hands to smooth out the edges.
Place the baking sheet with the energy bites on it in the refrigerator for 1 hour, or until the balls are hardened.
Transfer the energy bites to an airtight container and store in the refrigerator or freezer.
Leftover energy bites should be stored in an airtight container or bag. They will keep 5-7 days in the refrigerator, or 2-3 months in the freezer.
To thaw frozen energy bites, allow them to sit at room temperature for around 5 minutes or so before eating.
