Servings: 12
- 3/4 cup natural creamy peanut butter the only ingredients should be peanuts and salt
- ½ cup honey
- ¾ cup vanilla protein powder
- 2 cups rolled oats
- ¼ teaspoon salt
- 1/3 cup mini chocolate chips
Place the peanut butter in a microwave safe bowl and microwave it until runny. If your natural peanut butter is just opened at room temperature, this will be around 30 seconds. It will be closer to 60 seconds if your peanut butter was already refrigerated.
Add the melted peanut butter to a mixing bowl.
Stir in the honey, vanilla protein powder, oats, and salt until combined using a rubber spatula. Let this sit for 5 minutes so that it is no longer warm. This is so that the chocolate chips do not melt when you mix them in.
Fold the mini chocolate chips into the granola bar batter.
Line an 8 by 8 baking dish with parchment paper.
Press the batter down into the pan.
Refrigerate the protein bars for at least 1 hour, or until firm, then cut into 12 bars
