White Chocolate Spice Energy Bites
These White Chocolate Pumpkin Spice Energy Bites are an easy and tasty protein snack for fall!

- 1 cup natural creamy almond butter see notes
- ¼ cup canned pumpkin
- ¼ teaspoon cinnamon
- ¼ cup maple syrup
- ⅔ cup vanilla protein powder
- 2 teaspoons vanilla extract
- ⅔ cup rolled oats
- ½ cup rice krispies
- 1 ½ teaspoons salt see notes
- 1 ½ teaspoons pumpkin pie spice
- ½ cup white chocolate chips
Add all of the ingredients to a mixing bowl and use a rubber spatula to stir until a thick batter forms
Use a mini cookie scoop to drop balls of batter onto a wax paper lined baking sheet, then roll each one with your hands
Place the energy balls in the refrigerator for 1 hour, or until they are hardened.
Transfer the energy bites to an airtight bag or container. (see notes)
Natural almond butter does not have added sweetener. The only ingredients should be almonds, oil, and salt.
If your almond butter does not have salt in the ingredients: add the full amount of salt listed in this recipe.
If your almond butter has added salt: only add 1/4 teaspoon of salt, or salt the batter to taste.
