Gluten Free Chocolate Mug Cake

This easy gluten free chocolate mug cake is a great single serve dessert!

Ingredients

  • cup all natural peanut butter
  • 1 tablespoon no sugar added applesauce
  • 2 tablespoons maple syrup
  • 1 tablespoon cocoa powder
  • 1.5 tablespoons gluten free oat flour
  • ½ teaspoon coconut flour
  • ¼ teaspoon baking powder
  • 1 egg
  • 1.5 tablespoons mini chocolate chips
  • teaspoon vanilla extract
  • teaspoon sea salt

Instructions

  • Melt peanut butter in a mug for 30-35 seconds, or until a more soft consistency
  • Combine remaining ingredients in same mug and stir very well (make sure egg is totally combined)
  • (optional) top the mug cake with additional mini chocolate chips once mixed
  • Microwave for 1-2 minutes, or until a toothpick inserted comes out clean
  • Serve with vanilla ice cream!

Notes

I used Enjoy Life dairy free semi sweet mini chocolate chips in this recipe, and they were perfect!
