Oatmeal Chocolate Chip Cookie Muffins

- ½ cup extra virgin olive oil
- ½ cup coconut oil melted
- ⅓ cup unsweetened applesauce
- ⅓ cup unsweetened almond milk
- 1 tablespoon vanilla extract
- ¼ teaspoon ground nutmeg
- 2 eggs
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup brown sugar
- 2 cups whole wheat pastry flour
- 2 cups rolled oats old fashioned oats
- 10 oz chocolate chips
Whisk together olive oil, melted coconut oil, brown sugar, vanilla extract, almond milk, and applesauce
Add eggs and whisk to combine
In a separate bowl, whisk together nutmeg, salt, flour, baking powder, and baking soda
Add the dry mixture to the wet, and use a rubber spatula to mix until just combined
Fold in oats and chocolate chips
Line 2 muffin tins with parchment paper liners (these help the muffins not stick)
Fill muffin liners ¾ of the way full with batter
Bake at 350 degrees for 19-22 minutes, or until a toothpick inserted comes out clean
