Oatmeal Chocolate Chip Cookie Muffins

Ingredients

  • ½ cup extra virgin olive oil
  • ½ cup coconut oil melted
  • cup unsweetened applesauce
  • cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • 2 eggs
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brown sugar
  • 2 cups whole wheat pastry flour
  • 2 cups rolled oats old fashioned oats
  • 10 oz chocolate chips

Instructions

  • Whisk together olive oil, melted coconut oil, brown sugar, vanilla extract, almond milk, and applesauce
  • Add eggs and whisk to combine
  • In a separate bowl, whisk together nutmeg, salt, flour, baking powder, and baking soda
  • Add the dry mixture to the wet, and use a rubber spatula to mix until just combined
  • Fold in oats and chocolate chips
  • Line 2 muffin tins with parchment paper liners (these help the muffins not stick)
  • Fill muffin liners ¾ of the way full with batter
  • Bake at 350 degrees for 19-22 minutes, or until a toothpick inserted comes out clean
