Greek Cucumber Salad
Fresh and tangy greek cucumber salad with feta cheese, chickpeas and tomatoes.

- 15 oz can of chickpeas drained and rinsed
- ½ small red onion diced
- 4 oz crumbled feta cheese
- 2 cucumbers diced
- 4 roma tomatoes diced
- Juice of 2 lemons
- ¼ cup olive oil
- ¼ teaspoon pepper
- ½ teaspoon sea salt
- ½ teaspoon dried basil
Add chickpeas, red onion, feta, cucumber, and tomatoes to a large bowl and stir to combine
Add the lemon juice, olive oil, salt, pepper, and basil to a mason jar and shake to combine.
Pour the olive oil salad dressing over greek salad and toss to combine
Serve chilled
