Greek Cucumber Salad

Fresh and tangy greek cucumber salad with feta cheese, chickpeas and tomatoes.

Ingredients

  • 15 oz can of chickpeas drained and rinsed
  • 1/2 small red onion diced
  • 4 oz crumbled feta cheese
  • 2 cucumbers diced
  • 4 roma tomatoes diced
  • Juice of 2 lemons
  • 1/4 cup olive oil
  • 1/4 teaspoon pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried basil

Instructions

  • Add chickpeas, red onion, feta, cucumber, and tomatoes to a large bowl and stir to combine
  • Add the lemon juice, olive oil, salt, pepper, and basil to a mason jar and shake to combine.
  • Pour the olive oil salad dressing over greek salad and toss to combine
  • Serve chilled
