- 1 egg
- ¼ cup pumpkin puree
- 2 Tablespoons pure maple syrup
- 2 Tablespoons whole wheat flour
- ¼ teaspoon baking powder
- ⅛ teaspoon pumpkin pie spice
- ¼ teaspoon vanilla extract
- ⅛ teaspoon sea salt
- ¼ cup mini chocolate chips
Combine all ingredients in a microwave safe mug and stir until well combined
Microwave the mug cake on high for 2 to 2 ½ minutes, until cooked in the center
Serve as is or top with a scoop of vanilla ice cream
