Baked Tortellini

This easy baked tortellini recipe with veggies is a simple and delicious dinner for busy nights!

Ingredients

  • 20 oz refrigerated cheese tortellini
  • 24 oz tomato basil pasta sauce
  • 10 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 medium zucchini diced
  • 2 teaspoons italian seasoning
  • 6 oz shredded mozzarella
  • 1 cup parmesan cheese freshly grated
  • 1 tablespoon unsalted butter
  • salt to taste

Instructions

  • Preheat the oven to 375 degrees
  • Melt the butter in a skillet over medium heat
  • Add the minced garlic, mushrooms and zucchini and cook over medium heat for 8-10 minutes, until softened
  • Mix together the tortellini, sauce, garlic, mushrooms, zucchini, italian seasoning, parmesan cheese, and a few pinches of salt
  • Grease a small baking dish and add the tortellini mixture
  • Top with the shredded mozzarella and cover with aluminum foil
  • Bake at 375 degrees for 30 minutes or until the cheese is melted and is bubbly
  • Optional: remove the foil and broil for 1-2 minutes to brown the cheese on top. Watch CLOSELY to avoid burning
