- 2 cups all purpose flour
- 1 cup sugar
- 2 eggs
- 1 cup eggnog
- 2 teaspoons baking powder
- 2 teaspoons vanilla extract
- 6 tablespoons unsalted butter melted and slightly cooled
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
For the eggnog glaze
- 2 tablespoons eggnog
- 1 cup powdered sugar
Whisk together the flour, baking powder, cinnamon, nutmeg, and salt in a bowl
In a separate bowl, combine the sugar, eggs, eggnog, vanilla extract, and melted butter
Add the dry ingredients to the wet and stir until just combined
Line a muffin tin with parchment paper muffin liners
Distribute the batter evenly into 12 muffin cups
Bake the eggnog muffins at 350 degrees for 17-22 minutes or until a toothpick inserted comes out clean
Once the muffins have cooled, make the glaze by combining the powdered sugar and eggnog
