- 15 oz box yellow cake mix
- 15 oz canned pumpkin
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon cinnamon
- Brown sugar for topping (optional)
Add the the yellow cake mix, pumpkin purée, pumpkin pie spice, and cinnamon to a mixing bowl. Beat the ingredients with mixers until combined.
Line a muffin tin with parchment paper liners (these will not stick to the muffins) or spray regular muffin liners with cooking spray.
Distribute the batter evenly into the 12 muffin cups.
Sprinkle the tops of the muffin batter with brown sugar.
Bake the pumpkin muffins at 350 degrees for 22-25 minutes, or until a toothpick inserted comes out clean.
