These cake mix muffins only need 5 minutes to prep, and are ready from start to finish in just half an hour. We are making these and cake mix pumpkin bread on repeat!
Perfect for when you want a pumpkin treat along with your homemade pumpkin cold brew.

How to make pumpkin muffins from cake mix
Step 1: Beat together a box of yellow cake mix, one can of pumpkin, the cinnamon, and pumpkin pie spice.
Step 2: Line a muffin tin with parchment paper liners (these will not stick to the muffins), and distribute the batter into 12 cups.
Tip: If you use regular liners, just spray them with cooking spray so that they do not stick.
Sprinkle the tops of the muffin batter with brown sugar. This step is optional, but adds a nice touch!
Bake at 350 degrees for 22 – 25 minutes, until a toothpick inserted comes out clean.

How to customize these pumpkin muffins
To make gluten free: simply sub a box of your favorite gluten free yellow cake mix.
To make more wholesome: use a box of more natural cake mix and top with coconut sugar.
Other fun ways to change up these muffins would be to add toppings like mini chocolate chips or chopped walnuts or pecans in place of the brown sugar.

These muffins are delicious! Hardly any time to make, bake and scarf down. I mixed some white chocolate chips in the batter and topped them with the chips instead of brown sugar before baking. Perfect! Just perfect!

My family has declared this their new favorite muffin! I was a little short on the pumpkin, so I made up the difference with sour cream. Added in chocolate chips and topped with some brown sugar and cinnamon. Don't be afraid of kicking up the flavor with extra spice either. So delicious!

@Jeannie, Hi, pumpkin pie spice is a blend of cinnamon, ginger, nutmeg and allspice If you have all that you can make your own..just fyi !
