For the Dessert Cheese Ball Filling
- 8 oz cream cheese softened
- 1/2 cup unsalted butter softened
- 1 tablespoon vanilla extract
- 1/3 cup powdered sugar
- 1/3 cup plus 1 tablespoon crushed graham cracker crumbs
- 1/2 cup mini chocolate chips
For rolling the cheese ball
- 1/3 cup finely chopped pecans
- 1/3 cup mini chocolate chips
Beat the softened cream cheese, butter, and vanilla together in a mixing bowl until fluffy.
Add the powdered sugar and graham cracker crumbs and beat to combine.
Fold in 1/2 cup of the mini chocolate chips.
Cover the and chill the batter for at least 2 hours, or overnight.
Once chilled, use a rubber spatula and your hands to form the batter into a ball shape (it may help to use cooking spray to grease your hands).
Add 1/3 cup of mini chocolate chips and 1/3 cup of finely diced pecans to a bowl and roll the cheese ball to coat all sides.
Store the dessert cheese ball covered in the fridge until ready to serve.
Serve the chocolate chip cheese ball with nilla wafers, graham crackers, or other cookies of choice.
