Cinnamon Roll Energy Bites

These no bake Cinnamon Roll Energy Bites are a delicious snack that will satisfy any sweet tooth!

Ingredients

  • 1 cup natural creamy almond butter see notes
  • cup pure maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • ½ cup rolled oats
  • 1 teaspoon salt see notes
  • 1 ½ teaspoons cinnamon
  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Add the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon to a mixing bowl. Use a rubber spatula to mix the ingredients together until a thick batter forms.
  • Line a baking sheet with wax paper. Use a 1.5 tablespoons sized mini cookie scoop to drop balls of batter onto the baking sheet.
  • Roll each ball with your hands to smooth out the edges.
  • In a microwave safe bowl, add the white chocolate chips and coconut oil. Melt the chocolate in 10-15 second increments in the microwave, stirring each time, until melted. Be careful not to burn.
  • Drizzle the tops of the energy bites with the melted white chocolate.
  • Place the baking sheet with the energy bites on it into the refrigerator for 1 hour, or until the balls are hardened.
  • Transfer the energy bites to an airtight container and store in the refrigerator or freezer.

Notes

Almond butter

Natural almond butter: Natural almond butter does not have added sweetener. The only ingredients on the label should be almonds, oil, and salt. 

How Much Salt To Add

If your almond butter does not contain added salt: use the full amount listed in the recipe.
If your almond butter has salt in the ingredients: only add ¼ teaspoon of salt, or salt the batter to taste.

Storing

Leftover energy bites should be stored in an airtight container in the refrigerator or freezer. They will keep 5-7 days in the refrigerator or 2-3 months in the freezer.
