The Best Snack For Cinnamon Roll Lovers

With a creamy chewy center and spiced with cinnamon, these white chocolate glazed energy bites are what dreams are made of!

These cinnamon roll energy bites were one of my favorites to create when I was testing recipes for the cookbook.

I ended up choosing almond butter because of the cookie dough consistency it gives in energy bite recipes.

Just like my other protein ball recipes, these are made with feel good ingredients that will keep you satisfied longer.

With the way my boys eat, energy balls are an absolute must in our house! We almost always have a batch in the fridge for easy snacking.

Ingredients & Notes

  • Natural creamy almond butter: the only ingredients should be almonds, oil, and salt.
  • Pure maple syrup: the sticky natural sweetener to make it all stick together.
  • Vanilla protein powder
  • Vanilla extract
  • Rolled oats
  • Salt and Cinnamon
  • White chocolate chips and Coconut oil: for making the glaze.

How to make cinnamon roll energy bites

Step 1: Add the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon to a mixing bowl. Use a rubber spatula to mix the ingredients together until a thick batter forms.

Recipe Note

Added ingredients in almond butters can make a big difference in the finished recipe. This recipe calls for natural creamy almond butter. The only ingredients on the label should be almonds, oil, and salt.

Many natural nut butters are unsalted, so the recipe includes directions for how to much salt to add based on whether or not your almond butter is salted.

Step 2: Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet. Roll each ball with your hands to smooth out the edges.

Joy’s Tip

My favorite size mini cookie scoop to use for energy bites is a 1.5 tablespoon sized one. I find this to be just the right amount of batter per ball. Using a cookie scoop also helps make the process go a lot faster and cleanup easier!

Step 3: In a microwave safe bowl, add the white chocolate chips and coconut oil. Melt the chocolate in 10-15 second increments in the microwave, stirring each time, until melted. Be careful not to burn.

Step 4: Drizzle the tops of the energy bites with the melted white chocolate.

Step 5: Place the baking sheet with the energy bites on it into the refrigerator for 1 hour, or until the balls are hardened.

Step 6: Transfer the energy bites to an airtight container and store in the refrigerator or freezer.

Storing

Energy bites should be stored in an airtight container in the refrigerator or freezer. Leftovers will keep 5-7 days in the refrigerator or 2-3 months in the freezer.

To thaw an energy bite that is frozen, let it sit at room temperature for around 5 minutes before eating it.

Cinnamon Roll Energy Bites

Ingredients 

  • 1 cup natural creamy almond butter, see notes
  • cup pure maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • ½ cup rolled oats
  • 1 teaspoon salt, see notes
  • 1 ½ teaspoons cinnamon
  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions 

  • Add the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon to a mixing bowl. Use a rubber spatula to mix the ingredients together until a thick batter forms.

Notes

Almond butter

Natural almond butter: Natural almond butter does not have added sweetener. The only ingredients on the label should be almonds, oil, and salt. 

How Much Salt To Add

If your almond butter does not contain added salt: use the full amount listed in the recipe.
If your almond butter has salt in the ingredients: only add ¼ teaspoon of salt, or salt the batter to taste.

Storing

Leftover energy bites should be stored in an airtight container in the refrigerator or freezer. They will keep 5-7 days in the refrigerator or 2-3 months in the freezer.
