- 1 lb elbow macaroni
- 5 tablespoons unsalted butter
- 1/4 cup whole wheat flour
- 2/3 cup organic heavy whipping cream
- 2/3 cup 2% milk
- 4 cups shredded cheese I used half cheddar and half mozzarella
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 10 oz frozen peas
Cook noodles according to al dente package instructions
In large pan (I used a dutch oven), melt butter
add flour and whisk for one minute constantly
Add heavy cream and milk, whisking until mixture starts to thicken
add cheese, salt, and pepper (Sauce will be VERY thick and cheesy)
Add noodles and peas, and stir until combined
Transfer mixture to a 13 X 9 casserole dish
Bake at 350 for 10-20 minutes, or until bubbly and beginning to crisp
