Peanut Butter Balls with Graham Crackers

- 1 cup creamy no stir peanut butter
- 3 tablespoons unsalted butter melted
- ¾ cup powdered sugar
- 1 ½ cups graham cracker crumbs around 12 graham crackers
- ¼ teaspoon salt
- 12 oz semi sweet chocolate chips or chocolate melting wafers
Add the peanut butter and melted butter to the kitchenaid mixer (or use a hand mixer) and mix to combine.
Add the graham cracker crumbs and salt to the peanut butter mixture until combined.
Add the powdered sugar.
Finish mixing the batter with a rubber spatula until it is completely combined.
Line a baking sheet with wax paper or parchment paper.
Drop balls of batter onto it using a mini cookie scoop, then roll each one with your hands. You should get around 20 peanut butter balls
Chill the peanut butter balls for one hour in the fridge.
Melt the semi sweet chocolate chips until smooth. You can also use melting wafers if you prefer.
Dip the peanut butter graham balls into the melted chocolate and place them back onto the baking sheet.
Chill until firm.
