You’ll Love These Pumpkin Spice Energy Bites!

Energy balls are hands down one of my favorite snacks to make and this pumpkin version is so fun to make for the fall!

Each pumpkin spice energy bite has around 5 grams of protein, and is packed full of satiating healthy fats and delicious pumpkin spice flavor.

These energy balls taste like pumpkin spice cookie batter, but with a fun crunch from the rice krispies and white chocolate chips!

Ingredients Needed

  • Creamy Almond Butter
  • Canned Pumpkin: not pumpkin pie filling
  • Spices: cinnamon, salt, pumpkin pie spice
  • Maple Syrup
  • Vanilla Protein Powder
  • Vanilla Extract
  • Rolled Oats
  • Rice Krispies
  • White Chocolate Chips

How to make pumpkin spice energy bites

Step 1: Add all of the ingredients to a mixing bowl. Use a rubber spatula to mix it all together until it forms a thick batter.

Joy’s Tip

My favorite tip for portioning energy balls is to use a mini cookie scoop! I like the 1.5 Tablespoon size, but of course you can make them smaller or larger if you like.

Step 2: Line a baking sheet with wax paper for easy cleanup. Use a mini cookie scoop or spoons to drop balls of batter onto the baking sheet.

Roll each ball with your hands to form the circular shape, then place the cookie sheet in the refrigerator for one hour, or until the energy bites have hardened.

Step 3: Transfer the energy bites to an airtight container and store in the refrigerator or freezer.

A Note About Almond Butter

Most almond butters contain the following ingredients: almonds, oil, and salt. I have found that many natural nut butters do not contain added salt, so I have included instructions for both kinds.

  • If your almond butter is unsalted: use the full amount of salt listed in the ingredients
  • If your almond butter has added salt: only add 1/4 teaspoon of salt, or salt to taste.

My whole family loves energy bites! They make a great quick and healthy snack, or something sweet when that mid afternoon craving hits.

I love the addition of rice krispies for a little hidden crunch in every bite!

How to Store

Energy bites can be stored in an airtight container in the refrigerator for 4-5 days, or in the freezer for 2-3 months.

To thaw a frozen energy bite, simply let it sit at room temperature for several minutes before enjoying!

White Chocolate Spice Energy Bites

These White Chocolate Pumpkin Spice Energy Bites are an easy and tasty protein snack for fall!

Ingredients 

  • 1 cup creamy almond butter , see notes
  • ¼ cup canned pumpkin
  • ¼ teaspoon cinnamon
  • ¼ cup maple syrup
  • cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • cup rolled oats
  • ½ cup rice krispies
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons pumpkin pie spice
  • ½ cup white chocolate chips

Instructions 

  • Add all of the ingredients to a mixing bowl and use a rubber spatula to stir until a thick batter forms
  • Use a mini cookie scoop to drop balls of batter onto a wax paper lined baking sheet, then roll each one with your hands
  • Place the energy balls in the refrigerator for 1 hour, or until they are hardened.
  • Transfer the energy bites to an airtight bag or container. (see notes)

Notes

If your almond butter does not have salt in the ingredients: add the full amount of salt listed in this recipe.
If your almond butter has added salt: only add 1/4 teaspoon of salt, or salt the batter to taste.
