When I was creating my cookbook, I knew that I just had to add a coffee flavored protein ball recipe in there just for me.

Are these for the kids to enjoy? Nope! They are all for me, which is rare in my house.

I could eat these every day!

Not only do they taste like a sweet treat, but they are packed full of ingredients to actually keep me full.

Ingredients and Notes

The full recipe with instructions can be found at the bottom of this post, but here is everything you need to make these and a few helpful notes.

  • Natural creamy almond butter: The only ingredients should be almonds, oil, and salt. I tested several nut butters and almond butter was the clear winner to pair with the rich flavor of espresso.
  • Pure maple syrup: I tested this recipe with honey, but the flavor of the maple syrup paired much better with the richness of the espresso.
  • Vanilla protein powder
  • Vanilla extract
  • Instant espresso powder
  • Rolled oats: also known as old fashioned oats.
  • Salt: make sure to check the notes for how much salt to add based on your almond butter.
  • Mini chocolate chips: This adds a delicious chocolate flavor and crunch to every bite.

How to make espresso energy bites

Step 1: Mix together the maple syrup, vanilla, and instant espresso powder in a mixing bowl using a rubber spatula.

Step 2: Add all of the remaining ingredients to the mixing bowl and stir it all together with the rubber spatula until a thick batter forms.

Step 3: Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet. Roll each ball with your hands to smooth out the edges.

Joy’s Tip

A mini cookie scoop is a must in my opinion when making energy bites. It is perfect for portioning the batter out evenly with minimal mess. My favorite size to use is a 1.5 tablespoon mini cookie scoop.

Step 4: Dust the tops of the energy bites lightly with more espresso powder. This is optional, but I like that it added a little extra fanciness to them!

Step 5: Place the baking sheet with the energy bites on it into the refrigerator for 1 hour, or until the balls are hardened.

Storing

Once the energy bites are hardened, transfer them to an airtight container and store them in the refrigerator or freezer. They will keep 5-7 days in the refrigerator, or 2-3 months in the freezer.

Each one has around 4 grams of protein each, making them a satisfying snack when you are needing an energy boost.

These would be my perfect mid afternoon sweet treat to help me make it through the day!

Espresso Energy Bites

These rich espresso energy bites are the perfect midafternoon snack!

Ingredients 

  • 1 ¼ cups natural creamy almond butter, see notes
  • ½ cup maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • 3 tablespoons instant espresso powder
  • ½ cup rolled oats
  • 1 ¼ teaspoon salt, see notes
  • ½ cup mini chocolate chips

Notes

Almond Butter Note

Natural almond butter does not have added sweetener. The only ingredients should be almonds, oil, and salt. 

How Much Salt To Add

If your almond butter does not contain added salt in the ingredients, use the full amount listed in the recipe. If it does have salt in the ingredients, only add ¼ teaspoon of salt, or salt the batter to taste.
