Homemade Protein Bars

We are all about homemade protein bars in our house.

Not only are they easy to make, but I like that they are made with ingredients that I can recognize unlike many of the store bought kinds.

These monster cookie protein bars are the latest flavor that I dreamed up and my kids were big fans of these!

I make a batch of protein bars and store them already cut for quick snacks. They rarely last more than a few days in our house because everyone loves them!

Ingredients and Notes

Here is everything you will need to make these bars. The full recipe and instructions can be found at the bottom of this post.

  • No stir creamy peanut butter: this version of peanut butter has a small amount of added sugar. The ingredients should typically be peanuts, oil, salt, and sugar.
  • Honey: the natural sticky sweetener that holds it all together.
  • Quick oats: I like quick oats in this recipe to really give these bars that chewy monster cookie texture.
  • Vanilla protein powder
  • Vanilla extract
  • Salt
  • Mini chocolate chips: mini chips are perfect for chocolate in every bite!
  • Mini m&m’s: you will press these on top to complete the monster cookie look!

Step 1: Add the peanut butter, honey, oats, protein powder, vanilla extract, salt, and mini chocolate chips to a mixing bowl. Use a rubber spatula to mix it together until a thick batter forms.

Joy’s Tip

Be sure to note that this recipe calls for no stir creamy peanut butter, which is different in texture from natural peanut butter. If you want to use natural peanut butter you will need to alter the recipe to get the right texture.

The batter should be thick and pliable, but not so sticky that it sticks to your hands.

Step 2: Line an 8 by 8 baking dish with parchment paper and spread the batter evenly into the pan.

Step 3: Press the mini m&m’s into the tops of the bars.

Step 4:  Refrigerate the pan for 1-2 hours, or until the bars firm.

Step 5:  Remove the bars from the pan by lifting the sides of the parchment paper. Cut them into 12 rectangular bars.

For my kids I will cut the bars in half again to make mini bars and they love them!

If you have never made protein bars at home you must try it. They really are so easy and you don’t need any fancy ingredients.

Storing

Leftover protein bars should be stored in an airtight container in the refrigerator or freezer. They will keep 5-7 days in the refrigerator or 2-3 months in the freezer.

In our house they never last more than a couple of days!

Ingredients 

  • 1 cup no stir creamy peanut butter
  • 1/3 cup honey
  • 2/3 cup quick oats
  • ½ cup vanilla protein powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup mini chocolate chips
  • 2 tablespoons mini m&m’s

Instructions 

  • Add the peanut butter, honey, oats, protein powder, vanilla extract, salt, and mini chocolate chips to a mixing bowl.
  • Use a rubber spatula to mix it all together until a thick batter forms.
  • Line an 8 by 8 baking dish with parchment paper.
  • Spread the batter evenly into the pan.
  • Press the mini m&m’s into the tops of the bars.
  • Refrigerate the pan for 1-2 hours, until firm.
  • Remove the bars from the pan by lifting the sides of the parchment paper.
  • Cut the square into 12 rectangular bars.
