Energy Bites
Energy bites are one of the most requested snacks in my house.
We love them because they are so easy to make and are a satisfying snack that actually fills you up!
I love them so much that I wrote an entire cookbook with energy bite recipes.
These peanut butter pretzel ones are the perfect blend of salty and sweet, creamy and crunchy.
Not only do these taste better than store bought protein bars, but they have an easy to recognize ingredient list.
All you need is just 15 minutes or less and pantry ingredients to make a snack that your family is going to love!
How to make peanut butter pretzel energy bites
Step 1: Add the peanut butter, honey, pretzels, oats, protein powder, mini chocolate chips and vanilla extract to a mixing bowl. Use a rubber spatula to mix it all up until a thick batter forms.
Step 2: Line a baking sheet with wax paper, then use a mini cookie scoop to drop balls of batter onto the baking sheet. Roll each one with your hands to smooth out the edges.
Joy’s Tip
A mini cookie scoop is my favorite tool to use when making energy bites. I find the 1.5 tablespoon size to be perfect for portioning out batter. It also cuts down on the mess and makes the process go a lot faster!
Step 3: Place the baking sheet with the energy bites on it in the refrigerator for 1 hour, or until the balls are hardened. Transfer the energy bites to an airtight container and store in the refrigerator or freezer.
Substitutions
- Oats: you can substitute rolled oats for quick oats.
- Protein Powder: this recipe calls for chocolate protein powder, but vanilla would also taste great!
- Honey: you can substitute this for pure maple syrup or another sticky sweetener.
- Pretzels: use gluten free pretzels to make this recipe gluten free. The rest of the ingredients are naturally gluten free.
Storing
Store leftover peanut butter pretzel energy bites in an airtight container in the refrigerator or freezer. They will keep 5-7 days in the refrigerator, or 2-3 months in the freezer.

- 1 ½ cups no stir creamy peanut butter
- ½ cup honey
- ¾ cup chopped pretzels
- 1 cup quick oats
- ½ cup chocolate protein powder
- ½ cup mini chocolate chips
- 2 teaspoons vanilla extract
Instructions
- Use a food processor to pulse pretzels into small pieces. Measure the pretzels once chopped.
- Add all of the ingredients to a mixing bowl, then use a rubber spatula to mix it all together until a thick batter forms.
