A snack that tastes like pecan pie!

These no bake pecan pie energy bites are made with almond butter pecans, and graham cracker crumbs and sweetened with pure maple syrup.

These absolutely delicious protein bites that are a part of my upcoming cookbook (sign up for my email list so you don’t miss it!)

Each one has 5 grams of protein and is filled with healthy fats to keep you fuller longer.

My kids love energy balls for a snack and they never last long in our house. They are a favorite snack for kids and adults alike!

Ingredients & Notes

  • Almond Butter: you need natural almond butter for this recipe, which contains these ingredients: dry roasted almonds, oil, and salt.
  • Vanilla Protein Powder
  • Maple Syrup: real maple syrup, not pancake syrup
  • Pecan Pieces: save time by buying these in the baking aisle
  • Vanilla Extract
  • Graham Cracker Crumbs
  • Salt: see the notes for how much salt to add based on your almond butter
  • Mini Chocolate Chips

How to make pecan pie energy bites

Step 1: Add all of the ingredients to a mixing bowl. Use a rubber spatula to combine everything together to form a thick batter.

Step 2: Use a mini cookie scoop to drop balls of batter onto a wax paper lined baking sheet. Roll each ball with your hands to smooth out the edges.

Joy’s Tip

I find a 1.5 tablespoon sized mini cookie scoop to be the perfect size for making energy balls. It also makes the process go a lot quicker!

Step 3: Refrigerate the energy bites until they are firm to the touch. Transfer leftovers to an airtight container in the refrigerator or freezer.

How To Store

These pecan pie energy bites can be stored in an airtight container in the refrigerator for up to a week, or in the freezer for 1-2 months.

Pecan Pie Energy Bites

These no bake energy bites tastes like pecan pie!
Prep: 10 minutes
Servings: 27

Ingredients 

  • 1 ¼ cup natural almond butter, the only ingredients should be dry roasted almonds, oil, and or salt
  • 2/3 cup vanilla protein powder
  • ½ cup pure maple syrup
  • 1 cup finely chopped pecan pieces
  • 3 teaspoons vanilla extract
  • ¼ cup graham cracker crumbs, 2 graham crackers crushed
  • 1 ½ teaspoon salt, see notes
  • ½ cup mini chocolate chips

Instructions 

  • Add all of the ingredients to a mixing bowl and use a rubber spatula to mix until a thick batter forms
  • Use a mini cookie scoop (1.5 tablespoon sized) to drop balls of batter onto a lined baking sheet
  • Roll each one into balls using your hands
  • Refrigerate the energy bites until firm. Store leftovers in an airtight container in the refrigerator for one week, or the freezer for 2 months.

Notes

If your almond butter does not contain added salt in the ingredients, add the full amount listed in this recipe. If it does have added salt, add only 1/4 teaspoon of added salt to the recipe, or salt to taste.
