Strawberries and Cream Energy Bites

These strawberries and cream energy bites are all things delicious. My dream snack recipe made with filling nutritious ingredients like cashew butter, oats, salted cashews, and protein powder.
Each bite packs around 6g of protein and will keep me full for hours!
Just like my other energy bite recipes, this recipe is no bake and comes together in just 20 minutes or less.

Ingredients & Notes
These are easy to make and bursting with strawberry flavor! Here are the ingredients you will need and a few helpful notes.
- Natural creamy cashew butter: the only ingredients should be cashews, oil, and salt.
- Roasted salted cashews: these add a great texture to the energy bites!
- Rolled oats
- Honey: the sticky sweetener that holds it all together.
- Vanilla protein powder
- Vanilla extract
- Freeze dried strawberries: for adding the real strawberry flavor.
- Salt: see the recipe notes for how much salt to add based on whether or not your cashew butter has added salt.
- White chocolate chips & coconut oil: to make the drizzle on top.
How to make strawberries and cream energy bites
Step one: Add the cashews to a food processor and pulse them into small pieces. Place the cashew pieces in a mixing bowl.
Step two: Add the freeze dried strawberries to a food processor and process them into a fine powder. Reserve 1 teaspoon of the strawberry dust and set it to the side for topping the energy bites later on.
Step three: Add the remaining ingredients to the mixing bowl: cashew butter, oats, honey, protein powder, vanilla extract, and salt. Mix everything together using a rubber spatula until a thick batter forms.
Step four: Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet. Roll each ball with your hands to smooth out the edges.
Step five: In a microwave safe bowl, add the white chocolate chips and coconut oil. Melt the chocolate in 10-15 second increments in the microwave, stirring each time, until smooth.
Step six: Drizzle the tops of the energy bites with the melted white chocolate. Sprinkle the reserved strawberry dust over the tops of the melted chocolate immediately before the chocolate sets.
Step seven: Place the baking sheet with the energy bites on it into the refrigerator for 1 hour, or until the balls are hardened. Transfer the energy bites to an airtight container and store in the refrigerator or freezer.
Joy’s Tip
My favorite size mini cookie scoop to use for energy bites is a 1.5 tablespoon sized one.
I find this to be just the right amount of batter per ball. Using a cookie scoop also helps make the process go a lot faster and cleanup easier!
How to store
Store the energy bites in an airtight container or bag. They will keep 5-7 days in the refrigerator, or 2-3 months in the freezer.
To thaw frozen energy bites, allow them to sit at room temperature for around 5 minutes or so before eating.
Cashew Butter Note
This recipe uses natural cashew butter which is drippy by nature. You will need to stir it well when you open it.
Natural cashew butter has no added sugar in the ingredients. It should have the following ingredients: cashews, oil, and salt.
If you use a nut butter with added ingredients, it can affect the texture of the recipe, so make sure you check yours!

Strawberries and Cream Energy Bites
Ingredients
- 1 cup natural creamy cashew butter, see notes
- ½ cup roasted salted cashews
- ¾ cup rolled oats
- ¼ cup honey
- ½ cup vanilla protein powder
- 2 teaspoons vanilla extract
- ¼ cup freeze dried strawberries
- ¾ tsp salt, see notes
- ½ cup white chocolate chips
- 1 teaspoon coconut oil
Instructions
- Add the cashews to a food processor and pulse them into small pieces.
- Place the cashew pieces in a mixing bowl.
- Add the freeze dried strawberries to a food processor and process them into a fine powder.
- Reserve 1 teaspoon of the strawberry dust and set it to the side for topping the energy bites.
- Add the remaining strawberry dust to the cashews in the mixing bowl. Add the cashew butter, oats, honey, protein powder, vanilla extract, and salt and mix everything together using a rubber spatula.
- Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet. Roll each ball with your hands to smooth out the edges.
