Easter cookie bars
These Easter Cookie Bars are incredibly easy to make and require just a handful of ingredients. Using a box of cake mix is one of my favorite shortcuts for making soft and chewy cookie bars.
Colorful Easter M&M’s mixed in turn these bars into the perfect festive dessert for springtime. They come together quickly and are so simple to prepare!
These cookie bars bake up deliciously crisp on the outside with a soft and cakey center filled with melted chocolate in every bite. Best of all, you only need 5 ingredients and about 10 minutes of prep time to make this delicious Easter treat!

Ingredients needed
- Cake mix: we used classic white cake mix, but you can can also use vanilla or yellow cake mix.
- Butter: I like the texture that the melted butter gives these bars, but you can also substitute this for neutral flavored cooking oil.
- Eggs
- Easter M&M’s: pastel colored m&m’s make
- White chocolate chips: I love the sweet flavor of the white chocolate in these bars, but you can also substitute these for semi-sweet, milk chocolate, or dark chocolate chips for more flavor variations!

How to make Easter cookie bars
Step 1: Add the white cake mix, eggs and melted butter to a mixing bowl and beat to combine.

Step 2: Mix 1 cup of the M&M’S and the white chocolate chips into the batter.

Step 3: Grease a 9×13 baking dish with cooking spray and spread the batter into the baking dish.
Recipe Tip
The batter will be very thick and sticky and will take several minutes to spread, this is normal.
I have found that using greased hands or a rubber spatula is the easiest way to spread the dough out evenly into the pan.

Step 4: Sprinkle the top of the batter with the remaining 1/2 cup of Easter m&m’s.

Step 5: Bake the Easter cookie bars at 350 degrees for 20-25 minutes, or until a toothpick inserted comes out clean. Be careful not to over bake as it will dry the bars out.

Storing
Leftover cookie bars can be stored in an airtight container at room temperature for 3-4 days.

These come out perfect every time and I always get asked for the recipe. You can easily change up these bars for any holiday using different colors of m&m candies!

I’ve been making these cookie bars for years, and they’re always a favorite! One of the best things about this recipe is how easy it is to customize.
You can switch up the flavors by using different varieties of cake mix or mixing in a different kind of chocolate chips.
