ABC Mini Muffins

Mini muffins are one of the most made snacks in my house. They never last long and I love having them on hand to cut down on how many packaged snacks my kids eat.

Why are they called ABC muffins? Well, because they are made with Apples, Bananas, and Carrots!

These muffins have around 2 bananas, 1 apple, and 1-2 carrots in them.

These ingredients act as naturally sweeteners, and we also add in some pure maple syrup too to make them a little sweeter but still refined sugar free.

When my kids are being picky, I’ll make up a batch of these easy mini muffins and feel good about them eating a well rounded snack!

These are absolutely delicious and would be great for busy breakfasts on the go or a snacks for any time of day.

Ingredient Notes

The full list of ingredients and the instructions is at the bottom of this post, but here a few things to note when preparing your mini muffins.

  • Mashed banana: Measure this for best results, but you will need around 2 medium sized bananas. Mashing the banana very well is important so that you don’t have any chunks in the muffins.
  • Apple: Peel your apple, then grate it for the best texture.
  • Carrot: I also recommend peeling your carrot before grating it for this recipe, but this is optional.
  • Butter: Substitute this for oil or dairy free butter if needed.
  • Maple syrup: This is our favorite natural sweetener to use in baking. You want to use real pure maple syrup, not pancake syrup.

How to make ABC Mini Muffins

Step 1: Whisk together the dry ingredients in a mixing bowl: salt, baking powder, baking soda, and cinnamon.

Step 2: Mash the banana very well until no chunks remain. This is important for the texture of the muffins. My kids do not like biting into a big chunk of banana.

Step 3: In a separate bowl, whisk together the mashed banana, grated apple, grated carrots, melted butter, eggs, vanilla extract, and pure maple syrup.

Step 4: Add the dry ingredients to the wet, and mix until just combined. Do not over mix the batter.

Step 5: Grease a mini muffin tin with olive oil cooking spray and distribute the batter evenly.

Step 6: Bake the mini muffins at 350 degrees for 16-18 minutes, or until a toothpick inserted comes out clean.

Step 7: Allow the muffins to cool for 5 minutes in the pan, then remove them onto a wire cooling rack to cool completely.

Storing

Store leftover mini muffins in an airtight container in the refrigerator or freezer. They will keep around 4-5 days in the refrigerator or several months in the freezer.

These would be a great snack to prep ahead and freeze for busy days!

ABC Mini Muffins

These ABC Mini Muffins are made with apples, bananas, and carrots. The best muffins for picky toddlers made with nutritious ingredients!

Ingredients 

  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 ¾ cups all-purpose flour
  • ¾ cup very ripe mashed banana, around 2 medium bananas
  • ½ cup peeled grated apple, 1 small apple
  • cup grated carrot, around 1 medium carrot
  • ¼ cup butter, melted and slightly cooled
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ½ cup maple syrup
