Energy bites make the best snack!

Today I am sharing another recipe from my soon to be released Energy Bites Cookbook!

These chocolate chip banana bread energy bites are so easy to make and are a yummy healthy snack that you can feel good about eating.

As always, my rules for energy bites are the following:

  • easy to make
  • do not taste like protein powder
  • filled with healthy satiating ingredients
  • taste like a treat!

I am happy to say these energy bites check all of those boxes! The flavor tastes like banana bread married a no bake cookie.

They are made with wholesome ingredients like peanut butter, oats, honey, and protein powder for a little extra boost!

The full recipe with instructions can be found at the bottom of this post, but here is what you’ll need to make these!

Ingredients You Will Need

  • Natural creamy peanut butter: the only ingredients should be peanuts and salt
  • Mashed ripe banana: the riper the better!
  • Cinnamon
  • Honey: the natural sticky sweetener to hold it all together
  • Vanilla protein powder
  • Vanilla extract
  • Rolled oats
  • Salt
  • Mini chocolate chips

How to make banana bread energy bites

Step 1: Add all of the ingredients to a mixing bowl, then use a rubber spatula to mix it all together until a thick batter forms.

Rubber spatulas are my tool of choice when making any kind of energy balls. They work perfectly for handling thick and sticky batter!

Step 2: Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet. Roll each one with your hands to smooth out the edges.

Joy’s Tip

I find a 1.5 tablespoon sized cookie scoop to be the perfect size for energy bites. It also makes the cleanup and prep go a lot faster!

Step 3: Place the baking sheet with the energy bites on it in the refrigerator for 1 hour, or until the balls are hardened.

Step 4: Transfer the energy bites to an airtight container and store in the refrigerator or freezer.

Storing energy bites

Leftover energy bites can be stored in an airtight container or bag. They will keep 5-7 days in the refrigerator, or 2-3 months in the freezer. 

To thaw frozen energy bites, allow them to sit at room temperature for around 5 minutes or so before eating.

Banana Bread Energy Bites

These no bake Banana Bread Energy Bites are a delicious healthy snack that you can make in minutes!
Prep: 15 minutes
Servings: 30

Ingredients 

  • 1 cup natural creamy peanut butter, see notes
  • ¼ cup mashed ripe banana
  • 1 teaspoon cinnamon
  • ½ cup honey
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • 2 cups rolled oats
  • 1 ¼ teaspoons salt, see notes
  • ½ cup mini chocolate chips

Instructions 

  • Add all of the ingredients to a mixing bowl, then use a rubber spatula to mix it all together until a thick batter forms.
  • Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet.
  • Roll each ball with your hands to smooth out the edges.
  • Place the baking sheet with the energy bites on it in the refrigerator for 1 hour, or until the balls are hardened.
  • Transfer the energy bites to an airtight container and store in the refrigerator or freezer.

Notes

Natural peanut butter does not have added sweetener. The only ingredients should be peanuts and salt. 
If your peanut butter does not contain added salt: use the full amount listed in the recipe.
If your peanut butter has salt in the ingredients: only add ¼ teaspoon of salt, or salt the batter to taste.
