These no bake white chocolate gingerbread energy bites are the perfect holiday snack.
Each one comes in at around 5 grams of protein and is filled with healthy fats and protein!
This simple no bake snack comes together in less than 10 minutes and has less than 10 ingredients.
Energy bites are one of my favorite things to keep on hand for my boys to snack on. They are quick to make, taste like a sweet treat, and naturally filling!
I love that they are made with ingredients and sweeteners that are easy to recognize and I feel good eating them.

You can find the full recipe at the bottom of this post, but here are the ingredients that you will need to make these energy bites.
Ingredients You Will Need
- Natural creamy almond butter: the only ingredients should be almonds, oil, and salt.
- Pure maple syrup: the real stuff. Not pancake syrup.
- Vanilla protein powder
- Vanilla extract
- Rolled oats: also known as old fashioned oats
- Salt
- Spices: cinnamon and ground ginger
- White chocolate chips
How to make gingerbread energy bites
Step 1: Add all of the ingredients to a mixing bowl, then use a rubber spatula to mix it all together until a thick batter forms.
Joy’s Tip
A rubber spatula and a mini cookie scoop are a must in my opinion when making these! With these time saving tools you can make energy bites in minutes.
I like the 1.5 tablespoon size cookie scoop for portioning out batter.
Step 2: Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet. Roll each one with your hands to smooth out the edges.
Step 3: Place the baking sheet with the energy bites on it in the refrigerator for 1 hour, or until the balls are hardened. Transfer the energy bites to an airtight container and store them in the refrigerator or freezer.
A note about almond butter
This recipe calls for natural creamy almond butter. The only ingredients should be almonds, oil, and sometimes salt.
Do not use an almond butter with added sugar, as it changes the texture and will affect the end result of this recipe.
Many natural nut butters do not have added salt, so I have included instructions for how much salt to add to this recipe both ways.
I went back and forth with what kind of chocolate to use in this recipe, but I just kept coming back to the ones made with white chocolate chips.
Gingerbread and white chocolate together is a delicious match and the white chocolate chips add the perfect crunch to every bite!
These yummy little protein bites make a great healthy snack or something for your sweet tooth.
Storing
These gingerbread energy bites can be stored in an airtight container in the refrigerator for up to a week, or in the freezer for 1-2 months.
