I am always coming up with new ways to enjoy my very favorite snack: energy balls.

With three boys in our house, snacks are on an endless loop.

Energy balls are the greatest snack ever and you can’t change my mind!

They are so simple to make, made with basic pantry ingredients, and are actually satisfying. I can eat one of these and be full for hours.

The latest flavor I have cooked up are these oatmeal cookie protein balls. They are so yummy and taste like a no bake version of your favorite cookie!

You can find the full recipe with instructions at the bottom of this post, but here is a rundown of what you will need to make these energy bites.

Ingredients & Notes

You need just a few basic ingredients to make these energy balls.

  • Creamy no stir peanut butter: thicker and smoother than natural peanut butter, this version typically contains peanuts, oil, salt, and sugar.
  • Pure maple syrup: the sticky sweetener to hold it all together.
  • Rolled oats: also known as old fashioned oats, these give the energy balls a chewy cookie texture.
  • Vanilla protein powder
  • Mini chocolate chips: these add a great crunch and texture in every bite!
  • Cinnamon: what gives these the oatmeal cookie flavor.
  • Vanilla extract

Step one: Add all of the ingredients to a mixing bowl, then use a rubber spatula to mix it together until a thick batter forms.

Step two: Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the baking sheet.

Joy’s Tip

My favorite size mini cookie scoop to use for energy bites is a 1.5 tablespoon sized one. I find this to be just the right amount of batter per ball. Using a cookie scoop also helps make the process go a lot faster and cleanup easier!

Step three: Roll each ball with your hands to smooth out the edges.

Step four: Place the baking sheet with the energy bites on it into the refrigerator for 1 hour, or until the balls are hardened.

Step five: Transfer the energy bites to an airtight container and store in the refrigerator or freezer.

How to store

Leftover energy bites can be stored in an airtight container or bag. They will keep 5-7 days in the refrigerator, or 2-3 months in the freezer. 

To thaw frozen energy bites, allow them to sit at room temperature for around 5 minutes or so before eating.
