Protein Granola Bars

These homemade chewy Protein Granola Bars are so easy to make and have 11 grams of protein each!

We love these protein bars!
I am so excited to share with you my latest protein bar recipe!
These protein granola bars are made with only 6 easy pantry ingredients and come together in minutes.
Unlike the granola bars at the store, the ingredients in these are easy to recognize which I love!
No fancy stuff, just classic pantry staples that you can find in any store.
If you love chewy granola bars, you will love these!
Ingredients You Will Need
- Natural creamy peanut butter: the only ingredients should be peanuts and salt. This is different than no stir peanut butter so make sure you buy this kind specifically.
- Honey: our favorite natural sticky sweetener to use in protein bars!
- Vanilla protein powder: these would also be delicious with chocolate protein powder!
- Rolled oats: for that chewy granola bar texture.
- Salt: just a bit to make the flavors pop. Make sure to check if your peanut butter is unsalted, as you will need to add more salt to taste if so.
- Mini chocolate chips: I like using mini chips for chocolate in every bite, but you can also use full size if you want!
How to make protein granola bars
Step 1: Add your peanut butter to a microwave safe bowl and microwave it until runny.
Recipe Tip
If your natural peanut butter is just opened at room temperature, you will microwave it for around 30 seconds. It will be closer to 60 seconds if your peanut butter was refrigerated.
Step 2: Add the melted peanut butter to a mixing bowl. Stir in the honey, vanilla protein powder, oats, and salt until combined using a rubber spatula. Let this sit for 5 minutes so that it is no longer warm.
Joy’s Tip
Make sure you don’t skip this step! Letting the batter cool is so that the chocolate chips don’t melt when you mix them in.
Step 3: Fold the mini chocolate chips into the batter until combined.
Step 4: Line an 8 by 8 baking dish with parchment paper. Press the protein bar batter down into the pan.
Step 5: Refrigerate the protein bars for at least 1 hour, or until firm, then cut into 12 bars.
Storing
Leftover protein bars can be stored in an airtight container in the refrigerator or freezer. They will last 5-7 days in the refrigerator or 2-3 months in the freezer.
Each one of these bars has 11 grams of protein and will actually keep you full.
Just like my other protein snacks, these are quick to prepare and never last long!
These would make a great snack to prep for the week. They store beautifully and taste just as good after a few days in the fridge!
