These cake mix cookie bars have fast become top of my easy dessert list. With just 4 ingredients and a few minutes you can make homemade cookie bars in a fraction of the time!

Today I am sharing with you one of the most delicious and simple desserts that you’ll ever make! Have a bake sale coming up and need an easy dessert recipe? Or need a last minute dessert for the holidays?

This recipe and these cake mix banana muffins are two of my favorite ways to use a box of yellow cake mix!

I have made them for birthday parties, Christmas, dinner gatherings, graduations, and more. Basically any time I am asked to bring a dessert!

Everyone needs a back pocket simple dessert like this one. I love the simplicity of this dessert, and the taste of a homemade treat that didn’t take me an hour to make.

Step 1: Preheat your oven to 350 degrees. Beat the eggs in a small bowl. Add the cake mix and oil to the beaten eggs and mix well to combine.

Step 2: Beat in the chocolate chips (the batter will be very thick).

Step 3: Grease a 9 X 13 baking dish with cooking spray. Spread the cookie bar batter evenly in the dish (this will take several minutes to spread evenly). I have found the easiest way to do this is to use a rubber spatula or greased hands.

Step 4: Bake the cookie bars at 350 degrees for 20 – 25 minutes, or until toothpick inserted comes out clean. Once cooled, cut the cookie bars into squares.

Store any leftover bars in an airtight container.

Serve warm with ice cream for an extra delicious treat! Everyone loves them, and I love how simple they are to throw together.

Tips for spreading the batter

My preferred way to distribute the batter evenly is by using a rubber spatula.

It will take you a few minutes to press it down into the pan, but the rubber spatula is a lot easier to use for this than other kitchen tools I have tried.

If you don’t have a rubber spatula, you can try greasing your hands to help press the batter down.

If you’ve never made chocolate chip cookie bars with cake mix, you will be surprised at just how good they are!

They are unbelievably easy to make and so freaking good. We love having them warmed up with vanilla ice cream!

The texture of these bars is the thickness of a brownie with the taste of a chocolate chip cookie. They’re just so fun to eat and really satisfying and thick and chocolatey.

Leftover cake bars can be stored in an airtight container at room temperature for 3-4 days.

These easy 4 ingredient cake mix cookie bars are always a crowd pleaser!

Ingredients 

  • 15 ounce box of yellow cake mix
  • 2 eggs, beaten
  • â…“ cup olive oil, or substitute melted butter or vegetable oil
  • 12 oz chocolate chips

Instructions 

  • Preheat the oven to 350 degrees
  • Beat the eggs in a small bowl
  • Add the cake mix and olive oil to the beaten eggs and mix well
  • Beat in the chocolate chips (batter will be very thick)
  • Grease a 9 X 13 baking dish (see notes for thickness)
  • Spread the batter evenly in the dish (this will take several minutes to spread evenly as it is very thick and sticky)
  • Bake the cookie bars at 350 degrees for 20 – 25 minutes, or until a toothpick inserted comes out clean
  • Once cooled, cover or store in an airtight container

Notes

  1. The batter will be thick and hard to spread (this is normal) I found that using a rubber spatula and a spoon made it easier to spread into the pan. It may take a couple minutes, but it’s so worth it!
  2. The thickness of the cookie bars will depend on how large of a baking dish you use.

  1. Absolutely delicious and a quick and easy last minute dessert!!! 9×13 pan creates the perfect thickness and using a greased spatula makes it way easier to flatten the dough. Thanks for a great recipe!!!

  2. I just made these today and it was so easy and has incredible texture – a little crisp on the outside/top and soft/chewy on the inside! I downed 3 pieces… save me! I used lemon cake mix, added a tablespoon of poppyseeds, added half milk chocolate and half yogourt chips. I’m going to make this in every flavour for Christmas! Thank you for sharing this recipe!

  3. I made these for a church dinner. I did two batches, one with yellow cake mix and the other with Milk Chocolate cake mix and both with Semi-sweet chocolate chips. I cooked them longer than the 20 min because I couldn’t get the clean toothpick test to come out. I was expecting a brownie texture but they were harder like a cookie. I loved how easy it was to make and will try them again and just cook them for less time. I always have the ingredients on hand so that makes this a great recipe to keep.

  5. I made this last night. We like a Nike, thick, gooey cookie, so I used 2 cake mixes in a 9*13 pan and doubled everything. I did 2 boxes of a white cake mix, but added a teaspoon of cocoa powder, vanilla, and some brown sugar to the recipe. I used part butter, part olive oil and part veg oil. And I added a bag of chocolate chips. These cookie bars will be long gone before the end of today I am sure. A definite hit!

  7. I made these and they really are very good and full off chocolate goodness! I did find that it was much easier spreading the thick mixture by using clean, buttered fingers.

  8. These are great this time I added coconut and walnuts. You can add an infinite variety of items. Dried fruit, almond paste swirled in. Bananas, peanut butter. It’s limitless.

  9. These are amazing! The first time I made them I didn’t have enough of regular chocolate chips so I used a combo of dark, semi-sweet and milk chocolate. They were so good I do that every time now. I warn people that the batter is more like bread dough than batter. That seems to help their mindset. Using a spatula coated with cooking spray helps.
