How to make cake mix banana muffins

Step 1: Whisk together the vanilla extract, cinnamon, mashed banana, and melted butter. I have found the key to the perfect not mushy banana muffins is to measure exactly how much banana instead of just using 3 or 4 bananas.

Step 2: Add the eggs to the batter and whisk until combined.

Hubby is allergic to wheat. Do you think an almond flour cake mix would work? THanks!

I cannot recommend a substitution without trying it first. Almond flour typically is a much different texture in recipes.
