You’ll love this chocolate snack cake!
When I first made my Greek Yogurt Snack Cake, my kids went CRAZY for it. They thought I was really letting them eat cake for a snack and needless to say that went over very well!
Ever since I perfected that recipe, I knew I wanted to also make a chocolate snack cake.
This chocolate snack cake is super rich, fudgy and sweet without being overwhelmingly so. It is made similar to my Healthy Chocolate Muffins and is naturally sweetened with pure maple syrup.
Each slice has around 5 grams of protein in it and ingredients that you can feel good about!
Ingredients and notes
The full recipe with instructions is at the bottom of this post, but here are the ingredients that you will need to make this recipe.
- Plain whole milk greek yogurt: this adds both nutrition and the most delicious fluffy texture in baked goods.
- Unsalted butter: you can substitute this for coconut oil or olive oil if you want to.
- Eggs
- Vanilla extract
- Salt
- Baking soda and baking powder
- Pure maple syrup: not pancake syrup, but the real stuff. This is our favorite natural sweetener to use in baking.
- All-purpose flour
- Cocoa powder: this adds the rich chocolate flavor to this cake.
- Mini chocolate chips: mini chips means extra chocolate distribution!
How to make chocolate snack cake
Step 1: Whisk together the flour, cocoa powder, salt, baking soda, and baking powder. Set this aside.
Step 2: In another bowl, whisk together the greek yogurt, maple syrup, vanilla extract, and melted butter. Whisk in the eggs.
Step 3: Add the dry ingredients to the wet and stir until just combined.
Joy’s Tip
Be careful not to over mix the batter on this step as this can result in the cake being more dense or dry.
Step 4: Fold 3/4 cup of the mini chocolate chips into the chocolate snack cake batter using a rubber spatula.
Step 5: Pour the batter into a parchment paper lined 8 by 8 baking dish. Top the batter with the remaining ¼ cup of mini chocolate chips
Recipe Tip
Lining your baking dish with parchment paper will make cleanup a lot easier. Leave enough on the sides to allow you to pull the paper out and remove the cake completely once it is done baking.
Step 6: Bake the chocolate cake at 350 degrees for 28-32 minutes, or until a toothpick inserted comes out clean.
Step 7: Allow the cake to cool 10 minutes in the pan, then remove it by pulling the parchment paper out. Allow the cake to cool for an additional 10-20 minutes on a cooling rack, then cut it into 12 squares.
Storing
Leftover snack cake can be stored in an airtight bag or container in the refrigerator for 4-5 days, or in the freezer for 2-3 months.
