This cucumber juice is the latest in our juicing series and it is so easy to make!

Cucumbers are my go to when I need to make juice fast and don’t have a lot of time on my hands. Cucumbers light and refresing, hydrating, and pair well with just about any fruit or veggie juice.

This easy cucumber juice features lemon and green apple for a lightly sweet and tart juice that will leave you feeling energized!

Ingredients needed

  • cucumber: peeled and cut into long strips
  • lemon: peeled and quartered
  • green apple: cored and sliced

How to make cucumber juice

Step 1: Prepare your produce. You do not have to peel the cucumber, but I have found that some juicers have a harder time with it left on. Peel the lemon and cut into quarters. Remove the core from the apple and cut it onto slices.

Step 2: Run the cucumber, green apple, and lemon through a juicer. Serve immediately or serve for later.

Do you need to peel cucumbers before juicing?

No, you do not need to peel cucumbers before juicing them. That being said, some juicers may have a harder time with the peel on. I have found that my juice is smoother without the peel so I usually remove the peel before juicing them. It’s personal preference!

Should I use organic cucumbers?

This is personal preference. If you do not plan on peeling your cucumber, you may want to spend a little extra on organic ones. Either way, wash your cucumbers well before juicing!

When should I drink cucumber juice?

Some people recommend juicing on an empty stomach, but you will still get all the nutrients not matter when you drink this juice. I often drink juice after a snack or meal to avoid a spike in blood sugar.

How do I store fresh juice?

It’s really best to consume this cucumber juice while fresh, but you can also store it in an airtight glass or jar for 24 hours in the refrigerator.

I like to keep 4 oz, 8 oz, and 16 oz jars on hand for storing leftover juice. Fill it to the brim before putting the lid on for best freshness!

  • 2 large cucumbers, peeled and cut into long strips
  • 1 lemon, peeled and quartered
