These cake mix cookie bars have fast become top of my easy dessert list. With just 4 ingredients and a few minutes you can make homemade cookie bars in a fraction of the time.

You can use any flavor of cake mix and add in different mix ins. There are so many flavor possibilities that you could make with this recipe as a base.

I have made them for birthday parties, Christmas, dinner gatherings, graduations, and more. Basically any time I am asked to bring a dessert!

Ingredients You’ll Need

  • yellow cake mix: or any flavor cake mix
  • eggs
  • oil: any neutral oil like olive oil or vegetable oil
  • chocolate chips

Step 1: Preheat your oven to 350 degrees. Beat the eggs in a small bowl. Add the cake mix and oil to the beaten eggs and mix well to combine.

Step 2: Beat in the chocolate chips (the batter will be very thick).

Step 3: Grease a 9 X 13 baking dish with cooking spray. Spread the cookie bar batter evenly in the dish (this will take several minutes to spread evenly).

Recipe Tip

Use wet or greased hands or a rubber spatula to spread the batter into the dish. The batter is very thick and this will make it a little easier to spread!

Step 4: Bake the cookie bars at 350 degrees for 20 – 25 minutes, or until toothpick inserted comes out clean. Once cooled, cut the cookie bars into squares.

Serve warm with ice cream for an extra delicious treat!

If you’ve never made these before, you will be surprised at just how good they are!

The texture of these bars is the thickness of a brownie with the taste of a chocolate chip cookie. They’re just so fun to eat and really satisfying and thick and chocolatey.

Storing

Leftover cake mix bars can be stored in an airtight container at room temperature for 3-4 days, if they last that long!

Ingredients 

  • 15 ounce box of yellow cake mix
  • 2 eggs, beaten
  • 1/3 cup olive oil, or vegetable oil
  • 12 oz chocolate chips

Instructions 

  • Preheat the oven to 350 degrees.
  • Beat the eggs in a small bowl.
  • Add the cake mix and olive oil to the beaten eggs and mix well.
  • Beat in the chocolate chips (the batter will be very thick).
  • Grease a 9 X 13 baking dish. (see notes for the thickness)
  • Spread the batter evenly in the dish. This will take several minutes to spread evenly as it is very thick and sticky.
  • Bake the cookie bars at 350 degrees for 20 – 25 minutes, or until a toothpick inserted comes out clean.
  • Once cooled, store leftover cookie bars in an airtight container.

Notes

  1. The batter will be thick and hard to spread (this is normal). I found that using a rubber spatula and a spoon made it easier to spread into the pan. It may take a couple minutes, but it’s so worth it!
  2. The thickness of the cookie bars will depend on how large of a baking dish you use.

  1. I love the recipe. So far, I’ve used banana cake mix and added mashed banana with 2 Tbs oil and toffee bit. I’ve also used carrot cake mix and added slivered almonds and walnuts. With both I made a cream cheese drizzle and topped that with more chopped nuts. Yum. Thinking I’ll use strawberry cake mix with white chocolate chips and top it off with dehydrated strawberry crumbles.

  2. Just a quick note, in the instructions for this recipe I think you mistakenly wrote ‘olive oil’ in the directions and I imagine you use vegetable or canola? I used vegetable oil and it worked out perfectly! Absolutely delicious recipe!

    1. It was not a mistake as it can be used interchangeably along with vegetable or canola oil. Any of them work the same, or melted butter!

I am these bars as a cookie cake and it turned out perfect I used 2 boxes of cake mix and separated to put chocolate chips in a third and sprinkles and caramel chips in the other half as my granddaughter is allergic to chocolate I used royal icing to decorate the top and right on it. I am excited how it turned out! thank you for the ideas and help

  4. I added coconut flakes to the mix. Yummy. Thanks for the easy recipe. I had to make them again the next day because the first batch was gone.

    1. @nancy, yes you can! My mantra is ” out of sight, out of mind,” with just two of us in this household. When you take one or two out of the freezer bag, just microwave for a few seconds. They will be almost like fresh baked.

  5. This was sooo easy and very delicious! I used 1/3 cup of butter. I could have cooked it a few minutes longer, but still great

    1. @Aneeta, if you are not allergic to pumpkin, I found that canned pumpkin can replace eggs, I used this substitute one day when I wanted to make pancakes but the eggs have expired. I just read the amount to use on top of the can.

  6. Have to say amazing!
    I didn’t have yellow cake mix on hand but I did have white cake mix!

    I mixed in white chocolate, dried cranberries and an extra tbsp of melted butter. Tasted like my favorite sugar cookies but better!

    1. Did you use a larger pan or two pans? I can’t answer that without knowing. You should cook it until a toothpick inserted comes out clean.

    2. @Joy Shull, I used a 13×9 pan. I baked it right with the toothpick but the edges got crisp. Might be my oven,still very good.
